25 Minute Chicken & Noodles

Ingredients
  

  • 2 c. chicken broth 1-1/2 is not enough! lol
  • 1/2 tsp. dried basil
  • 2 c. vegetable combination - carrots broccoli, cauliflower (I used the last of a bag of broccoli and cauliflower florets, and more of the frozen chopped carrots I mentioned in my last post.)
  • 2 c. uncooked whole wheat pasta If you're using a large pasta like rotelle, I suggest using a little more, as it fills up the measuring cup faster.
  • 2 c. cooked cubed chicken I used the shredded chicken I had in the freezer.
  • 1/8 tsp. pepper

Instructions
 

  • In medium skillet, mix broth basil, pepper, and vegetables. Over medium-high heat, heat to a boil. Reduce heat to medium; cover and cook for 5 minutes. stir in uncooked noodles. Cover and cook for 5 more minutes or until the noodles are cooked. Add chicken and heat through.
  • Says it serves four, but I think that's squeezing it a bit. I would say three, I think, although using a smaller pasta, or a little more of the larger pasta, may help with that.
