Beefy Cauliflower One-Dish Meal

Ingredients
  

  • 2 lbs. cauliflower florets I used frozen.
  • 4-6 carrots peeled & sliced (Fairly large, chunky slices are fine.)
  • 1-1.5 lbs. ground beef browned
  • about 1 c. broth I used chicken broth, because it's what I had. Beef broth would obviously make more sense, if you have it.
  • about 1/2 tsp. garlic powder
  • about 1/2 tsp. turmeric
  • about 1/16 tsp. ground chipotle pepper or smoked paprika, for less heat
  • salt & pepper to taste

Instructions
 

  • Simmer cauliflower and carrot in the broth in a covered Dutch oven until almost tender.
  • Add the remaining ingredients and simmer until everything is hot, most of the liquid has been absorbed, and the veggies are tender.
