Sausage-Cheese Balls

Ingredients
  

  • 3 c. whole wheat flour
  • 1-1/2 Tbsp. baking powder
  • 3/4 tsp. salt
  • 1/4 lb. butter
  • 1 lb. breakfast sausage raw (I use turkey sausage.)
  • 8 oz. grated cheddar

Instructions
 

  • Combine dry ingredients.
  • Cut in butter.
  • With your hands, mix in sausage and cheddar, adding a tad bit of water to make a dough.
  • Form into 1" balls and bake on a baking sheet at 375 (F) for 20 minutes.

Notes

Because these don't have to rise, and the sausage and cheese serve to hold things together, I've had pretty good success using gluten-free flours in this -- even substitutes as simple as brown rice flour.
