Well, last night I had a “duh” moment. I have been trying for ages to accumulate some slow cooker recipes we like, so I can have supper ready by the time we come home on Errand Day. The problem is, I don’t really like the slow cooker. A lot of slow cooker recipes take too long, or not long enough, for me to be able to prep them at the proper time to have them ready by dinnertime, if I’m gone all day. Many require attention at several times throughout the cooking period, again making them impractical for this purpose. (Who designs these recipes, anyway? What good is the slow cooker if you have to babysit it all day?) Of what’s left, there are a lot we simply don’t care for. So far, I think we’ve found one keeper. 🙂
Then, last night, it “clicked” – leftovers. Errand Day is the perfect time for a Clean Out the Refrigerator Night! The leftovers are already cooked; they just need heating, which can be done in minutes after we get home, and requires little enough attention that I can tend to it and still get groceries put away. It helps make space in the refrigerator for anything I’ve just brought home. And, if worse comes to worst and we are really late, hubby can go ahead and prepare his own. I think this is going to be our new default plan. 🙂
