One of the items on my 101 Things in 1001 Days list is to try 5 new snack recipes. This has become more difficult — and more necessary — as I’ve recently been diagnosed with gluten sensitivity. (I didn’t bother to mention it before, because I was diagnosed the day after being put on bed rest, so I haven’t been cooking and, therefore, really didn’t have anything to share. But now, at 36 weeks — yay! — I should be able to start doing some experimenting in the kitchen.)
Snacks
Sooo…some of the snack recipes I intend to try are:
- millet crackers (These call for some kamut or wheat flour, though, so I’ll have to play with the recipe.)
- peanut butter “candy” (Actually, I’ve made this before, so I’m not sure why it’s still on the list. My directions say to make it with wheat germ or with powdered milk, and I wasn’t as big a fan of the powdered-milk version. But maybe I’ll try it with something like ground flax or hemp seed. Plus I’m curious…does anyone know if wheat germ is safe for the gluten-intolerant? As I understand it, the gluten is not in the germ of the wheat. So maybe it depends on how sensitive one is?)
- no-bake granola bars (Again, I’ll have to play with the flour some.)
- maybe these kale chips (I hate greens. But that’s all the more reason to see if these are a tolerable way to eat them!) [UPDATE: These were absolutely disgusting. I ended up throwing them all away after tasting them.]
I had pretzels and pita snacks on my list, too, but I think I’ll hold off on such gluten-dependent items for a while, as making gluten-free versions will be much more complicated than these others.
Cookbooks
Meanwhile, it has occurred to me that I’ve read a lot of allergy cookbooks (even before my diagnosis, as I read them “for fun”), and they all have their own individual strengths, weaknesses, and quirks. It might be helpful to have all that information in one place. So I may begin working on a page that just summarizes these things for each cookbook I read. Most of the ones I own are currently out on loan, so I’ll get those up in a while. But for the time being, I can make notes about the ones I’m checking out from the library. Hopefully such a list will be useful for helping someone else decide which book(s) to invest in first.
