Jenn at Frugal Upstate is hosting a series this month on frugal foods. Last week’s “focus food” was eggs. I’m a bit late getting this up, as I didn’t think I had anything new to add, but I came across a recipe in my recipe software this morning that is a perfect fit. 🙂
This is not a family favorite, or even a recipe I’ve ever made before, personally. It comes from The Ellis Island Immigrant Cookbook, compiled by Tom Bernardin. (Sorry for the imprecision of the recipe. The original was like that.)

Goldenrod
Instructions
- Cook rice.
- Make a white sauce.
- Hard-cook some eggs, and separate yolks from whites.
- Chop the egg whites and mix them into the sauce.
- Pour this mixture over the rice, while still hot.
- Sprinkle with the egg yolks.
- Serve hot.
