I seem to have been pretty inconsistent with my blogging lately. I have plenty of blogging ideas – all at the same time! Then I go for several days not knowing what to post. I need to put my own advice into practice and save some posts to go live later.

Meanwhile, today is the We All Scream for Ice Cream recipe roundup over at Joy of Desserts. I’m looking forward to checking out some of the other recipes because, honestly, we don’t make ice cream very often. We should; we have an ice cream maker. I just don’t think about it. I thought I’d post a recipe, though, for “ice cream” in the Vita-Mix (or a really good blender). We like to make these because they’re pretty healthy, so I feel good about the children, especially, eating them. Basically, any super-thick smoothie is like an ice cream or sorbet, but if it’s banana based, it’s even better, because the banana makes it thick and creamy. Like this:
frozen bananas (preferably in chunks, not whole)
squirt of honey
dash of vanilla
Process until smooth.
(Note that this has to be eaten right away, though; it doesn’t store well.)
Oh you have the fabulous Vita-Mix! I remember when my aunt bought one many years ago and my mom told all of us that she had cooked SOUP in my aunt’s mixer! It was unbelievable! I love that mixer and wish I had one myself. For anyone reading this who doesn’t know, the Vita-Mix is so powerful that it can make hot soup or frozen ice cream right in the mixer and in a matter of a few minutes!
