The original version of this was a Pillsbury recipe. It served four and used brown sugar. I adapted it to use palm sugar to make it AIP-friendly, and adjusted it to serve six (because my family is larger). You could also pretty easily divide up the ingredient quantities to make a single serving, if you needed/wanted to. This was a hit with everyone in the family (which is saying something!)

Caramelized Garlic Chicken
Ingredients
- 3 tsp. olive oil
- 6 cloves garlic minced
- 6 tsp. palm sugar
- 3 boneless skinless chicken breast halves
Instructions
- Heat oven to 500°F.
- Cut the chicken breasts in half the "flat" way, to form six cutlets.
- Heat oil in small nonstick skillet over medium-low heat until hot. Add garlic; cook 1 to 2 minutes or until garlic begins to soften, stirring frequently. Remove from heat; stir in palm sugar until well mixed.
- Place chicken breast halves in 13x9" baking dish. Spread garlic mixture evenly over chicken.
- Bake at 500°F. for 10 to 15 minutes or until chicken is fork-tender and juices run clear; instant-read thermometer should read 160.
