I love S’mores. Who doesn’t? (Well, except those crazy people who don’t like chocolate.) Unfortunately, I rarely have a campfire going. One of the best things about S’mores is the perfectly-browned marshmallows with their crispy exteriors and gooey interiors. Mmmm.
The trick to getting those perfectly-golden marshmallows when toasting them over a campfire is patience. You have to hold the marshmallow close to – but not in – the flame and wait for it to brown. And you can do much the same thing inside the house…with your broiler.
Indoor S’mores
You can definitely do this with the “real” ingredients for S’mores – you know, jumbo marshmallows and actual chocolate bars. I just rarely happen to have those around and do often have marshmallows (for hot cocoa) and chocolate chips (for baking), so I use those. (This is not one of those “health food” recipes, by the way! There are homemade options for marshmallows and graham crackers that are much healthier. This is just fun.)
Lay out your first set of graham crackers – the “bottom halves.” (These look weird because they’re Smoreables. I’m gluten-free, so I can’t eat the “real” ones.) Top with your chocolate – in my case chocolate chips. (If you line them up sitting on their flat sides they’ll work just fine. And then the little marshmallows will rest between them okay.) Then top with the marshmallows.
Put them under the broiler and watch them carefully. They should turn golden and puff up. Beautiful!
Top with the remaining graham crackers, squish, and eat.

Indoor S'mores
Ingredients
- graham crackers or substitute - Smoreables, firm neutral-flavored cookies, etc.
- chocolate milk or semisweet will melt better than very dark chocolate
- marshmallows
Instructions
- Top half of the graham crackers with chocolate, then with marshmallows.
- Place under the broiler and watch carefully for the marshmallows to turn golden-brown and puff up. Remove promptly from the heat.
- Top with the remaining graham crackers, squish, and eat.
