The focus for Thriving from A-Z and the letter H is Helping the Homeless. Being able to serve the homeless in our communities, on a one-on-one basis, presents a challenge with regard to storage. Food is one of the most basic needs of all people, but most food doesn’t travel well, so you can’t just carry it in your car to be sure you have it on hand when it’s needed.
Thrive Life does. Now, due to the fluctuating temperatures in a car, I recommend you rotate it fairly regularly. But the nature of the freeze-dried food means you can keep a couple of meals in the car, ready to go, together with a couple bottles of water as a means of rehydration. (Some friends of mine also swear by their Jetboil, to provide boiling water whenever it’s needed.)
I’m still experimenting with and thinking about the different ways this could be done, but a good place to start might be the single-serving chicken salad. (See recipe below, from the Thrive Life site as linked in the previous sentence.)
Thrive Life Single-Serving Chicken Salad
Ingredients
- 3 Tbsp. Thrive Life chopped chicken
- 1 Tbsp. Thrive Life onions freeze-dried
- 1 Tbsp. Thrive Life celery
- 1/4 tsp. Chef's Choice seasoning or other all-purpose seasoning blend
- 4 Tbsp. water
- about 1/2 Tbsp. mayo or one packet
Instructions
- Combine dry ingredients in zip-top bag or 4-oz. canning jar.
- To serve, add the water and let sit for 20 minutes, stirring every few minutes.
- Add mayonnaise to taste.
Add the dry ingredients, an unopened mayonnaise packet, and a fork or spoon to a zip-top bag and, together with a bottle of water, you have an individual meal all ready to go. When it’s time to eat, remove the mayo packet and fork or spoon, add the water, and reseal. Squish it every few minutes until it’s ready, then open it up and add the mayo and stir/eat with the fork or spoon.

Sure! There’s also a new product out now that has the chicken salad “premixed.” (It still needs water and mayo, but the chicken/onion/celery/seasoning are already combined.)
