Happy Popcorn Day! I thought it would be fun to gather up for you a variety of recipes for seasoning your popcorn. First up, here’s a new one I created just for the occasion. I’m calling it “Smokehouse” Popcorn.
Smokehouse Popcorn
1. Pop your corn. I used about 1/4 c. popcorn kernels in a tablespoon of coconut oil. We use a Whirlypop, but you can just use a large covered pot. (It needs to have a handle you can hold onto, to shake it occasionally while the kernels pop, to “stir it up,” without burning yourself.)
2. Drizzle it with butter. Ours was a little skimpy on the butter, because I discovered as we were popping the corn that we were basically out. I would probably have used about a quarter of a stick. We got about… 1-1/2 tablespoons, probably. Melt it, drizzle it over the popcorn, then quickly toss to mix.
3. Top with garlic salt, additional salt, and smoked paprika. Unfortunately, I didn’t think to measure these. I think we used around 1/8 tsp. garlic salt and 1/8 tsp. plain salt (both RealSalt) and a large pinch of smoked paprika. Toss again.
This was really tasty!
More Popcorn, Please!
Maybe Smokehouse Popcorn isn’t your thing. Or maybe you just eat popcorn a lot and want more options. I have the following in my recipe database, gathered from a variety of sources:
Cheesy: 1/2 c. parmesan mixed with 3 Tbsp. butter; toss
Cinnamon: Toss w/ cinnamon sugar & butter
“Zesty”: Parmesan + garlic salt
Tex-Mex: taco seasoning or chili powder in butter; toss
Pizza popcorn: basil, oregano, + parsley OR pizza seasoning in butter: toss
Vanilla: Add 1/2 split vanilla bean to oil along with corn (during popping). After popping, scrape out the seeds and add to popped corn, along with butter, 1/2 Tbsp. superfine sugar, and a little salt.
Sugar & Spice: Heat 3 Tbsp. butter with 2 Tbsp. sugar, 1/2 tsp. cinnamon, and 1/4 tsp. nutmeg until butter and sugar are melted. Toss popcorn with this mixture, then with pumpkin pie spice.
Hot Mustard Popcorn (from popcorn.org): 1 tsp. dry mustard, 1/2 tsp. thyme, 1/2 tsp. salt, 1/4 tsp. black pepper, dash cayenne; mix, then toss.
Peanut Butter (from my friend Annette M.): Heat 1/2 c. sugar and 1/2 c. honey to rolling boil. Remove from heat and stir in 1/2 c. peanut butter and 1/2 tsp. vanilla. Pour over popcorn and mix well.
